I dedicate this month’s taco to my friend Rand Chortkoff. He is the founder and president of Delta Groove Music and a member of the band, The Mannish Boys. Rand is hosting the Blues Stage at this year’s Simi Valley Cajun and Blues Festival. For details see the festival poster on this site.

I present to you... The Delta Groove Taco

3 lbs tri tip

Delta Rub as follows:

1/4 cup smoked paprika

1 tbsp dark brown sugar

1 tbsp sugar

2 tsp kosher salt

1 tsp celery salt

1 tsp cracked black pepper

1 tsp ground chipotle pepper

1 tsp cayenne pepper

1 tsp dry mustard

1 tsp granulated garlic

1 tsp onion powder

Combine all dry ingredients and store in an airtight container.

Rub tri tip and refrigerate overnight. Grill to medium rare.

Slice meat and place in corn tortillas topped with spring mix lettuce, shredded muenster cheese, sour cream and salsa
